- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 2 cups cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- ½ red onion, thinly sliced
- ½ cup mixed olives
- ½ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- Creamy Herbed Yogurt Sauce:
- 1 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, finely chopped
- Salt to taste
Instructions
- Pat steak dry and season with olive oil, oregano, garlic powder, salt, and pepper.
- Grill over medium-high heat for 4–5 minutes per side for medium-rare.
- Rest 5 minutes, then slice against the grain.
- Whisk yogurt sauce ingredients until smooth.
- Divide rice into bowls and top with steak, tomatoes, cucumber, onion, olives, and feta.
- Drizzle with yogurt sauce and garnish with parsley before serving.
Notes
